This dataset contains UV–Vis absorbance spectra (200–1380 nm) of 25 % w/w sucrose solutions from beet and cane sources collected in nine countries. It also includes spectra of binary mixtures created for quantitative modeling. The data enable classification and quantification of sucrose origin using chemometrics.
