Fluorescence measurements can reveal chemical changes in fish muscle during storage. This release contains excitation-emission data from aqueous extracts of frozen-thawed, modified-atmosphere-packed cod fillets. CMA1_fluo.mat provides AllSamples_X (105 x 4303: sample x unfolded fluorescence variables), Axis1 (331 emission wavelengths from 270 to 600 nm), Axis2 (13 excitation wavelengths from 250 to 370 nm), and design (105 x 3) with frozen-storage temperature, frozen-storage time code, and chill-storage time. The design covers 35 storage conditions with three replicates each.
