Fluorescence excitation-emission matrix (EEM) measurements of five laboratory-made samples containing different amounts of tyrosine, tryptophan, and phenylalanine dissolved in phosphate-buffered water at pH 7.0. Samples were measured on a PE LS50B spectrofluorometer with 2.5 nm excitation slit width, 10 nm emission slit width, and 1500 nm/s scan speed. The curated file stores X as a 5 x 201 x 61 tensor with emission and excitation axes, plus the 5 x 3 concentration matrix Y. The dataset is a compact benchmark for PARAFAC and multi-way decomposition.
